Once harvested, washed and cut, chicory root (Cichorium intybus) is hot-air roasted and then ground. It can be used directly in a moka pot by filling the filter halfway, or by boiling it for a few minutes in water and then filtering it. This produces a pleasant, hot beverage with a strong taste that contains no stimulating substances.
